I don’t actually like mashed potatoes much but I found the cauliflower mashed ‘potatoes’ to be very delicious and creamy. I hope you enjoy this recipe!

Ingredients:

  • 4 cups of cauliflower florets (one medium head)

  • 1.5 tablespoons butter

  • 1.5 tablespoons half and half

  • salt and pepper to taste

Directions

  1. Steam cauliflower in a large pot until soft

  2. Add the butter and half and half and blend in a blender until smooth

  3. season with salt and pepper to taste

    4 carbs per serving, 2 grams of fiber (6 servings)
