I don’t actually like mashed potatoes much but I found the cauliflower mashed ‘potatoes’ to be very delicious and creamy. I hope you enjoy this recipe!
Ingredients:
4 cups of cauliflower florets (one medium head)
1.5 tablespoons butter
1.5 tablespoons half and half
salt and pepper to taste
Directions
Steam cauliflower in a large pot until soft
Add the butter and half and half and blend in a blender until smooth
season with salt and pepper to taste
4 carbs per serving, 2 grams of fiber (6 servings)
